Vegan Peanut Butter and Chocolate Chip Cookies

I make this recipe every week with my daughter at the moment, and when I make this for work – they are all gone in a flash!
I have also made this recipe with buckwheat flour for a gluten-free version which works very well
Prep Time 15 minutes
Cook Time 12 minutes
Total Time 27 minutes
Servings: 20 cookies
Course: Dessert

Ingredients

  • 130 grams Unsalted plant butter – I use flora plant butter block
  • 100 grams caster sugar – you can just use one type of sugar and double the amount
  • 100 grams Light brown sugar
  • 2 tbsp Aquafaba – I sometimes use the cooking liquid of other beans too, it doesn't have to be chickpeas – any white bean that's in a tin in your cupboard will do. I have even used red kidney and black beans liquids in emergencies – but they do add colour
  • 150 grams crunchy peanut butter
  • 200 grams plain flour
  • 1 tsp bicarbonate of soda
  • 50 grams chocolate chips – i use dark chocolate
  • 1/2 tsp vanilla essence
  • 1 pinch salt

Equipment

  • 2-3 Cookie trays
  • 1 Electric mixer

Method

Prep
  1. Preheat the oven to 180℃
  2. Line your cookie trays with paper – you don’t need to grease them
Making the cookies
  1. Beat the plant butter and the sugars with the electric mixer until pale and fluffy
  2. Add the aquafaba and vanilla essence and continue beating on slow
  3. Add the peanut butter and beat on slow until well mixed
  4. Add the flour, bicarbonate and pinch of salt and mix with a metal or wooden spoon until you get that cookie dough consistency
  5. Make little ball shapes, squish them flat and put them on the baking trays. Some people recommend leaving them as balls, but I don’t find these melt too much when squeezed flat and having them flat helps you gauge how much space they are going to take up
  6. Make sure they are well spaced allowing for some expansion
Baking
  1. Bake for around 12-15 minutes depending on how crispy you like them
  2. When they first come out of the oven they will be very fragile – I wouldn’t move them to a wire rack straight away, give them about 5 minutes to firm up. If you do want to move them – do so very carefully with a spatula that can hold a whole cookie

Notes

These keep well in a cake tin or airtight container for around a week
